I find the mini loaf pans produce the perfect size loaf.
Lightly spray the pans with cooking spray (Pam)
Use a scale and measure 8.5 oz. (241 g) of batter into the pans.
I’m not just being fussy here,
if you use 8.5 oz., you will get exactly 11 loaves
and since they are all uniform in size and weight,
they bake at the same rate.
